Meatless Monday, Part 2

I was cleverly tricked into posting 2 Meatless Monday recipes today.

You sneaky devils.

I was you-know-what deep into taking pictures of Jesus’s Kale Salad when I got the fourth request in 3 days for the Cookie Dough Dip recipe.  I was totally planning on saving for it next week but after receiving #4 and a couple of other irritated sounding texts (“Please. Send. Recipe.” is a recent example) I am beginning to feel a bit threatened/ ganged up on. It’s become clear that if I wait any longer my head will be on the chopping block.  Fine.

It’s really quite amusing to watch the consumption of this dip (By the way, you should know that it’s actually more of a batter).  It’s pretty much the same each time. Boys are like,  Take bite, face lights up, shoveling of dip begins. I got a “what is this shit?!” (In a good way I think, since boys speak like this) and lots of miscellaneous exclamations. I don’t ever tell the boys that it’s vegan, has no refined sugar and is full of protein.  Why ruin a good thing?

Watching girls eat it is a  slightly different experience. Same would-be initial reaction, only more care is taken to hide excitement. The shoveling process is more discreet. And then the  “God I’m such a pig.”/  “I can’t stop eating this, I’m so fat.” comments ensue. I usually feel bad for them by then, pull them aside and whisper “It’s totally cool,  it has more protein than a Power Crunch bar. Eat more.” And drop some knowledge about what the batter-like dip is actually made of.  Eyes widen. Mouths open. And more vegan no-processed anything-high protein Cookie Dough Dip that takes just like real honest to god cookie dough is consumed.

I wish I could say this was my recipe but it’s not. I got it from Chocolate Covered Katie, a Vegan dessert blog that I’m outright obsessed with. I’m starting to think that this Katie person is my bestie.  She is completely unaware of my existence. Creepyville, I know.

Some notes:

  • I’ve made this a couple of ways and strongly prefer the white beans to garbanzo
  • My favorite sweeteners have been maple syrup and agave
  • And I definitely prefer the almond butter to peanut butter – it tastes much more like traditional cookie dough. If you’re a PB fan though, have at it!

    Again…LOVE! I have heard of this recepie but didn’t believe it could be good. Gonna try it. Coral adores raw cookie dough. But since we are trying to eat more raw foods and less sugar we don’t eat it much. But now I think she may be singing my praises!! Thanks cuz.

      Oh cousin. They will be singing your praises…I thought for sure it was too good to be true but it’s such a hit everywhere it goes. Chocolate Covered Katie’s whole blog is pretty amazing if you’re looking for raw/low sugar/natural desert- I’ve tried a lot of them. I have no idea how she comes up with this stuff…but I am SO glad she did!
